Executive profile: Nick Melvin balances family and burritos

Nick Melvin is the founder of Doux South Specialties, known locally for its gourmet pickles. He is also a chef who served as culinary director of Fox Bros. BBQ until March 2020, when a voluntary furlough turned into a permanent exit. Stuck at home amid the pandemic, Melvin passed the time in his family kitchen and eventually started a burrito pop-up, Poco Loco, with his wife Kristen. The business grew, and the Melvins now run a brick-and-mortar Poco Loco, which operates as a take-out restaurant and market in Kirkwood.
